We stopped in at the Prairie Art and History Museum in Colby on our way to Denver mostly because we felt bad about just driving through Kansas and writing it off as one big wheat/corn field with a long stretch of highway running through it.
We found that the high plains definately have a long and fascinating history and there's more to this part of the US than meets the eye (and chocolate coated sunflower seeds are pretty tasty :)
